Grilled Zucchini with Pine Nuts and Goat Cheese
- 1/2 cup Lawry’s® Lemon Pepper Marinade with Lemon Juice
- 2 pounds zucchini, halved lengthwise
- 2/3 cup pine nuts, toasted
- 1/2 cup crumbled goat cheese
In large resealable plastic bag, pour 1 ⁄4 cup Lawry’s® Lemon Pepper Marinade with Lemon Juice over zucchini; turn to coat. Close bag and marinate in refrigerator 30 minutes. Remove zucchini from marinade. Grill or broil zucchini, turning once and brushing frequently with remaining unused marinade, 6 minutes or until tender; coarsely chop. Sprinkle with pine nuts and goat cheese. Serves four.
